Sopaipillas

      Sopaipillas are deep fried pastries. They are delicious served immediately after cooking with honey.

Ingredients

1 pkg active dry yeast 1/4 cup warm water 3 tbs shortening 1 1/2 tsp salt 2 tbs sugar 4 cups all-purpose flour 1 cup whole wheat flour Vegetable oil

Directions

In a large bowl dissolve the yeast in warm water. In a large pan combine the milk, shortening, salt and sugar. Heat until the shortening is melted and then remove from heat and add to the dissolved. yeast. Beat in 3 cups of the all-purpose flour and all of the whole wheat flour. Add in 1/2 cup of the all-purpose flour and mix until a stiff, sticky dough forms.

Turn dough onto a floured board and knead while adding the remaining flour, as needed, until the dough is smooth and elastic. Place the dough in an oiled bowl and turn to coat the top of dough with oil. Cover with a cloth and let stand at room temperature for one hour. Then punch down dough. Dough can be chilled overnight at this point which will improve the results.

Knead dough slightly. Roll on a floured board to 1/8 in thickness. Cut the dough into three inch rectangles or trianles and refrigerate until ready to fry.

To Fry: Heat at least two inches of vegetable oil in a skillet or electric fryer to 350 degrees on a deep fat frying thermometer. Fry two to three sopaipillas at a time, turning several times, until they are puffed up and pale golden on both sides. Drain on paper towels.

Serve immediately with honey.
