Refried Beans![]() Navigation: Main page » Mexican Recipes Author: Admin Mexican refried beans are commonly served as a side dish. Have you ever ordered a platter in a Mexican restaurant that didn't come with some refried beans? You can buy refried beans in grocery stores or make your own using dried pinto beans. You may also use already cooked pinto beans that you can find in cans or jars. Here are two recipes for refried beans. One is made the traditional way that involves actually frying the mashed beans in a skillet. The other recipe is prepared by baking the mashed beans. Lard is traditionally used when making refried beans but I have substituted bacon drippings. Garnish refried beans with shredded lettuce, chopped onions, shredded cheddar cheese, sour cream, or taco sauce. Refried beans can also be used as a filling for burritos. Refried Beans (using the frying method) Ingredients 1 lb Dried Pinto Beans 1 tbs salt 1 tbs sugar 3 Cloves of Garlic ! tbs Sugar 1/2 cup Bacon Drippings 1/4 cup Bacon Drippings Directions Follow the cooking dirctions on the package of beans. The directions usually say to first check the beans and remove any bad beans or rocks. Then soak in a large pot of water over night. Then pour of the water and rinse the beans until the water is clear. Place the beans in a pot of water, add the sugar, and bring to a boil, reduce heat and simmer for three hours until the the beans are soft. You may need to add water from time to time. Add the 1/2 cup of bacon drippings, garlic cloves, and salt. Cook for one more hour. Drain off all of the water. In a large skillet heat the 1/4 cup of bacon drippings. Then add the beans and fry and stir continually until the beans are reheated. Then mash the beans with a potato masher and fry some more. You can add water or milk to get them the consistency that you like. Add salt to taste. Refried Beans (oven method) 1 lb Dried Pinto Beans prepared as directed above. !/2 cup chopped onions 2 cloves garlic, minced 1/4 tsp Cumin 1/4 cup Bacon Drippings Prepare the Pinto Beans as directed above. Place the beans in a large mixing bowl, add the Cumin. In a skillet saute the onion and garlic in the bacon drippings, then add to the beans. Mash the beans with a potato masher or hand mixer until they are the consistency you like. You may have to add milk or water. Place the bean mixture in a casserole dish and cover with foil. Bake for one hour at 350 degrees or until heated through.
