Red Rice -- Arroz Rojo![]() Navigation: Main page » Mexican Recipes Author: Admin Mexican red rice, arroz rojo, get its coloring from the tomatoes. This recipe can be used as a side dish or fill tortillas with the mixture. Ingredients 1 cup Long grain rice 1/2 Onion, chopped 1 tsp Crushed Garlic 1/4 tsp Cilantro 1 16 oz can of plum tomatoes, pureed with juice 1/4 tsp Black Pepper 1/4 tsp Salt 1 tsp Vegetable oil 1 3/4 cup Vegetable stock or water, can also use chicken stock Directions In a non-stick skillet fry the rice in 1 tsp oil on medium heat, stirring constantly, until golden brown. Add all remaining ingredients to the rice and bring to a boil. Cover and reduce to a simmer. Cook until the liquid is absorbed and the rice is tender, about 15 to 20 minutes. Serves 6.
