Nachos with Chicken or Steak

      This recipe for nachos can be either a meal or an appetizer. If you add chicken or steak strips it will be substantial enough for a meal.

Layered Nachos

One large bag of tortilla or nacho chips
2 cups Pepper Jack cheese, shredded
2 cups Monterey Jack Cheese, shredded
2 cups Cheddar Cheese, shredded
1 cup Diced tomatoes
1/2 cup Green onion, chopped
1/2 cup Fresh cilantro, chopped
1 cup Black beans, drained and rinsed
1 cup of shredded cooked chicken, or cooked steak strips


      This is made in two layers so everything needs to be divided in half when you assemble it. First preheat your oven to 350 degrees. On a large oven-proof platter, place half of the chips. Then place half of each of the cheeses on the chips.

       Follow with half of the tomatoes, onion, beans, and cilantro. Add on the remaining chips and top with the remaining tomatoes, onion, beans, and cilantro. Then add the chicken or steak. Top all of it with the remaining cheese. Bake in the oven until the cheese is melted. Serve topped with salsa, sour cream, black olives, guacamole, anything you like.

      This will serve six as an appetizer. If you want to serve it as a meal then prepare on two platters to serve two people. It's great for using with leftover chicken or meat. You could also use ground beef or turkey that has been seasoned with taco flavoring.
