Mexican Wedding Cookies

      Mexican Wedding cookies, called Polvorones in Mexico, are similar to a shortbread cookie. They are rolled in powdered sugar after baking which makes them additionally delicious.

Ingredients

1 cup butter or margarine, room temperature 1/2 cup Sifted Confectioners' sugar (powdered sugar) 2 cups All-purpose flour 1/4 tsp Salt 1 tsp Vanilla 1 cup finely Chopped pecans Additional Confectioners' sugar for rolling and chopped pecans for garnishing

Directions

Pre-heat the oven to 350 degrees. In a mixing bowl cream butter and sugar until smooth. Add flour, salt and vanilla and mix until blended. Mix in the nuts.

Roll dogh into one-inch balls and place on an ungreased cookie sheet. Bake until light golden, about 10 to 12 minutes. The cookie bottoms should be golden brown. Roll the warm cookies in the confectioners' sugar immediately after baking and cool on wire racks. After they have cooled roll in the sugar again and sprinkle with chopped pecans. Makes about 3 dozen cookies.
