Huevos Rancheros

Huevos Rancheros Platter for six

Ingredients

6 eggs
6 corn tortillas
1/2 cup chopped onion
1 clove garlic, minced
3 tomatoes, chopped
1 small can chopped green chile peppers
1 cup Monterey jack cheese, shredded
salt and pepper to taste
oil for cooking

Directions

      Heat two tablespoons of oil in a small skillet. Dip the corn tortillas, one at a time, in the oil for 10 seconds or until they are limp. Line tortillas in a baking dish. In the same skillet cook the onion and garlic. Add the tomatoes, green chiles, and salt and pepper. Cover and simmer for ten minutes. Spoon mixture over the tortillas. Heat one tablespoon of oil in a large skillet. Carefully break the six eggs in the skillet to poach. Cook until the whites of the eggs are set and then add one to two tablespoons of water to the skillet, cover and cook to desired doneness.

      Remove the eggs from the skillet and spoon over the tomato mixture in the baking dish. Add the salt and pepper to taste. Sprinkle with the Monterey Jack cheese. Place in the oven and broil until the cheese is melted. Serves six.
