Green Rice - - Arroz Verde![]() Navigation: Main page » Mexican Recipes Author: Admin Green rice, arroz verde,gets its coloring from the green chiles. This recipe can be used as a side dish or fill tortillas with the mixture. Green Rice -- Arroz Verde Ingredients 1 cup Long grain rice 1 small white onion, quartered 3 cloves garlic 2 Jalapeno peppers, seeded and chopped 2 Poblano chiles, roasted and chopped 3 cups Vegetable or chicken broth 1/4 cup fresh cilantro 1 tsp salt 1 tsp vegetable oil 3 tbs butter Directions In a non-stick skillet fry the rice in 1 tsp oil on medium heat, stirring constantly, until golden brown. Remove rice from skillet and set aside. Place all the remaining ingredients, except the broth, in a food processor and blend until finely chopped. Add the butter to a large sauce pan and cook the mixture in the pan for five minutes. Add the broth and rice and stir well. Bring to a boil. Cover and reduce heat to a simmer. Simmer for 15 to 20 minutes until the rice is tender. Serves 6.
