Chile Relleno Casserole

     Chile Relleno means stuffed chile. It is usually prepared with a large green chile stuffed with cheese, dipped in batter and then fried. Here is an easier way to create the same effect. This is a recipe for a layered chile relleno casserole.

Ingredients

3 4 ounce cans of whole green chiles
2 eggs
1/2 lb Monterey Jack Cheese
1/2 lb Cheddar Cheese
1 cup evaporated milk
1/3 cup flour


Directions

Rinse the seeds off the green chiles and dry on a paper towel. Shred the cheeses and toss together. In a mixing bowl blend the eggs, four, and milk together. In a 1 1/12 quart casserole layer the ingredients in the following order - cheese, chiles, cheese, then pour on 1/2 of the liquid mixture, follow with chiles, cheese, and the remaining liquid. Bake in the oven at 375 degrees for 50-60 minutes or until set.

You may garnish with whatever you like such as salsa, sour cream, guacamole, etc.
