Chicken Quesadillas

     Quesadillas have been called the Mexican equivalent of a grilled cheese sandwich. A quesadilla is made by filling a flour tortilla with a combination of cheese and your chosen ingredients, foldidng it in half, or topping with another tortilla, then heating it in a skillet until the cheese is melted and the tortillas are slightly browned.

      You can use an electric skillet or a skillet on your stove top. You can also find electric quesadilla makers which save you the trouble of having to turn the tortillas during cooking. Make use of leftover meats or chicken you may have. If you don't want to use meat you may also use refried beans. If you don't have any onions or tomatoes on hand just go ahead and use salse instead.

Chicken Quesadillas

Ingredients

2 large round flour tortillas
6 oz shredded Monterey jack cheese or cheddar cheese
1/4 onion, chopped
1 small tomato, chopped
1 cup cooked chicken, shredded
Jalepeno peppers as a garnish to taste (optional)


Directions

      Heat one tsp oil in a large skillet at medium heat. Place one tortilla in the skillet and top with one half of the cheese followed by all the other ingredients and then top with the rest of the cheese. Then place the second tortilla on top of the cheese and press down on the tortilla with a spatula. You want the cheese to start melting and hold everything together.

      Check the bottom tortilla and when it appears to have browned use a large spatula to turn the tortilla over to cook the other side. Then remove to a large serving plate. Cut into six wedges like you would cut a pizza.

      Garnish with salsa, sour cream, and jalapenos.
